Description:This learning module addresses issues related to aging and nutrition. The three lessons are:
  • Lesson 1: Importance of Eating and Strategies for Eating Alone
  • Lesson 2: Meals Without Cooking
  • Lesson 3: Nutritious Snacking
The goal of lesson one is to increase awareness among older adults of the importance of eating regularly and to provide strategies to improve caloric and nutrient intake. Participants are encouraged to identify and overcome nutritional risk factors. One tool used in the lesson is the Determine Your Nutritional Health screening form. In addition to these risk factors, the authors also address changes in taste and smell, constipation, and activity level. The activity in Lesson 1 uses a question and answer format following the stages of the screening form checklist. The goal of Lesson 2 is to provide information on healthy and balanced meals without cooking. The goal of Lesson 3 is to help elders select healthy snacks. Examples of healthy snacks from each food group are provided. Each lesson includes goals, concepts, learning and behavioral objectives, activities, background information and an evaluation. Many of the activities, hand-outs and transparencies are included in the CD-ROM.

Reviewers Comments: Background information provides extensive details for the educator. Some information and statistics are limited to Florida. Food Stamp Nutrition Educators should note the recommendation for incentives and refer to the Food Stamp Nutrition Education Program Plan Guidance. Lessons include a multitude of interactive components and options. For example, a game from lesson three titled “Nutritious Snacking from A-Z” involves participants naming the food after it is described based on the clues from the food group and the letters provided. The activities encourage participants to initiate realistic behavior changes. The tone is positive and the material is sensitive to the needs of the population. Meal recommendations use common, low cost and healthy ingredients.
